What Makes a Braai Different?

The key difference is fire. A true braai is always done over wood or charcoal — never gas — and the process of building and tending the fire is as important as the cooking itself.

Essential Braai Meats

Boerewors (farmer's sausage) is non-negotiable. This coil of spiced beef and pork sausage is the soul of any braai. Lamb chops, marinated chicken, and sosaties are also staples.

The Perfect Braai Fire

Use hardwood or quality charcoal. Build a good fire, let it burn down to glowing coals, then cook over the embers — never over open flames.
